Yes, you can eat ornamental cabbage %26amp; kale, however, it is a little more "bitter" than its edible cultivar cousins (broccoli, cabbage, cauliflower). When it's cooked it will turn to a unappetizing gray color. Through the years of propagating an ornamental, colorfully leaved variety, most of the palatable flavor has been lost. Reply:My wife has been buying pickled purple cabbage for years in glass jars, very tasty with cold meats and salad.

White cabbage is boiled in the normal way, tasty with a cheese white sauce, and boiled spuds.
Reply:They are definitely edible, although they may not taste quite as good as those bred for the purpose of eating. Chow down! ;-)
