How do you boil cabbage tender and still green? My always turns brown.?
I have found not to boil it at all. Take your cabbage and slice it very thinly into strips. Melt butter in a large skillet over medium heat and add in your cabbage and stir to coat then season well with salt and pepper. Now add in about 1/4 cup water and cover and turn down to medium low. Let your cabbage steam for about 15-20 minutes or until desired tenderness. This way your cabbage never turns brown and you don't have to boil it.

You're overcooking it. Lower temperature, slower time. But invest a couple bucks in a vegetable steamer. It fits inside your existing pan.

Reply:I don't know if this works for cabbage but I always do it for my green asian veggies: bring water to the boil, add veggies, then add a tsp of sodium bicarbonate (baking soda) to the water (also salt if you want it). The veggies turn a bright green colour and keep staying green while they cook. Good luck!!!

It should only take about ten minutes or so.

I only add enough water to cover the cabbage and I cut it in to small pieces and use a sauce or sautee pan. I think it cooks faster that way, I like my tender, but with a little firmness.
Reply:We always do ours in the microwave which is similar to steaming it. Cut your cabbage in wedges and put them in a covered glass casserole with about 1/2 inch water in the bottom. Cook on high for 5-10 min. and check to see if they're done. Cook a little longer if you want them softer, but don't overcook, then drain and butter. Delicious and still a little crisp.

Reply:brown?! mines never done that, youre probably cooking it too long. put it in a pan of boiling water with a sprinkle of salt, and only cook it for 10 minutes.

Reply:you are probably leaving it for too long. make sure that the water is already boiling and just put it in for 2 minutes.
Reply:Add lemon juice to your water this will keep the color to your cabbage. If your using southren style seasoning(bacon grease) in your cabbage that will also make cabbage turn brown.
Reply:You have to boil it at a very low temperature and don't add alot of oils or butter until the very end!!
Reply:Add some lemon juice to your water. Doing this to most green vegetables keeps their color
Reply:Add a little lemon juice to your water it helps keeps things fresh and keep their color just like when you cut potatos and they start turning a brown color either add lemon juice or even some lemon lime soda
