Is it possible to make sour kraut using full heads of cabbage?

answer is yes, but you'll need a month to ferment it... The ol' German frauleins take the whole head, peel them leaf by leaf and ferment those with only water and salt, no vinegar. That's what they use for cabbage rolls and the like. I suggest to you to be well informed about doing home fermentation as it might result in sickness and possibly death. Leave it to the experts!

Reply:ive always made it with shredded cabbage you need to do that so that the salt makes it through the layers . I dont think it is possible to make it from the whole head . I have made sourkraut ever since i was little and we always shredded our cabbage
