I need a great recipe for about 50 - 75 people.

Glazed Corned Beef with Cabbage Wedges



INGREDIENTS:



* 1 corned beef brisket, about 6 to 9 pounds

* 1/3 cup sugar

* 1/4 cup currant jelly

* 1 medium head cabbage, about 1 1/2 pounds

* 1/4 pound salt pork or several slices bacon

* 8 to 12 small potatoes, boiled

* paprika and fresh minced parsley



PREPARATION:

In a large kettle or Dutch oven, cover corned beef with cold water. Simmer, covered, for 5 to 6 hours. Skim off excess fat frequently. Add boiling water as often as necessary as cooking liquid boils down.About 15 minutes before done, add sugar. Cool slightly then place corned beef in a broiler pan. Brusn currant jelly over the corned beef. Place under broiler for several minutes, until glazed.

Wash cabbage, cut into 8 wedges, and cook in kettle with salt pork or bacon for 15 to 20 minutes. Slice corned beef and arrange on platter, surrounded by cabbage wedges and potatoes. Sprinkle potatoes with a little paprika and parsley, if desired. Serves 4, with leftover corned beef. Use leftovers to make a corned beef casserole or Shepherd's Pie.





Corned Beef And Cabbage



INGREDIENTS:



* 3 carrots, cut 2-inch pieces

* 1 corned beef brisket, about 4 to 5 pounds

* 3 medium onions, cut in wedges

* 1 cup water

* 1/2 small head of cabbage, cut in wedges



PREPARATION:

Put all ingredients in order listed except cabbage in slow cooker. If necessary, cut corned beef brisket in half to fit in crockpot. Cover and cook on LOW 8 to 10 hours. Add cabbage wedges to liquid pushing down to moisten turn to HIGH and cook 2 to 3 hours longer.f your crockpot is too small, cook cabbage separately in boiling salted water and serve with the corned beef and carrots.





Crockpot Corned Beef and Cabbage Recipe



INGREDIENTS:



* 6 to 8 medium potatoes, peeled and cut into thick (about 1/2-inch) slices

* 3 medium carrots, thinly sliced

* 2 ribs celery, thinly sliced

* 1 corned beef brisket, about 3 pounds

* 1 cabbage, about 2 pounds

* 1/2 teaspoon black pepper

* 1 1/2 cups water



PREPARATION:

Lightly butter or spray a 5 to 6-quart crockpot; layer potato slices over bottom of pot with carrots. Place corned beef on vegetables. Slice cabbage into 8 wedges and arrange around meat. Sprinkle with the pepper and add water.Cover and cook on LOW setting for 7 to 8 hours, until meat and vegetables are tender.



Remove meat to a platter; cover with foil and rest for 10 to 15 minutes before slicing.

Serves 8.

4-pound corned beef brisket - 'silverside' if you can get it; many butchers are familiar with the term and can prepare your cut of brisket in this special way. But, do allow them several days to prepare it properly.

3 large carrots, cut into large chunks

6 to 8 small onions, roughly chopped

1 teaspoon powdered English mustard

1 large spring of fresh thyme and several parsley stalks tied together

1 cabbage

Salt and pepper to taste



Method

1. Put the corned beef into a large pot with the carrots, onions, mustard powder and herbs.

2. Cover with cold water; bring to a boil and then lower heat and simmer for 1 hour. From time to time, skim fat from top as it rises.

3. Discard the outer leaves of the cabbage and cut into quarters, Add to the pot. * Cook for another one to two hours or until the meat and vegetables are tender.

4. Serve the corned beef cut into slices and surrounded by the vegetables. Serve with a generous amount of potatoes, boiled in their jackets and freshly made mustard. (We use Colman's which is readily available). In addition to the English mustard we also like the following horseradish sauce:



Horseradish Sauce

1/2 pt Whipping Cream

2 tablespoons prepared horseradish

Whip cream until it stand in peaks. Fold in horseradish.



*We prefer our cabbage crispy firm, so, we cook it separately. Cooked quickly in boiling water, it retains its beautiful bright green color. We season it heavily with fresh ground pepper and we don't go easy on the butter!



Note: Our dear friend Judith Flynn sent us the following Corned Beef "sauce" which sounds really tasty: Sliced the beef and place it on an oven proof serving platter. Mix up 2 tablespoons of mustard, 2 tablespoons of catsup and 1/3 cup brown sugar (packed). Spread over the corned beef. If it is a large piece, double the recipe. Put it back in the oven for a bit to warm the sauce
Reply:put the corned beef in plastic bag, pierce some holes in bag, boil it for about 45 minutes, cut into pieces the cabbage , and boil this for about half hour. serve with mollassses or honey mustard...potatoes mashed on side are great idea too, hit in my household.

Reply:you may need 2 pots lol, this is my favorit! i use canned corn beef(i am lazy), 2 medium firm heads of cabbage ,1 per pot. 2 cans dieced tomatos, 2 cans medium chili beans hot if you like it spicy. my husband has stomach trouble so i use med. ...cut your cabbage pour in equal amount of each of the cans into both pots, cook on high untill a boil, turn down to medium( 4-5) on stove untill the cabbage is tender(soft) i am telling you like this because myself , i do not always understand certain words or what some spice is, i was not a good cook when i first got married lol , but i think i have come a long way in 20 years. but my family loves this! i serve with round ritz crackers. good luck and GOD BLESS.
Reply:I use cornbeef in the can and its really good,you will need 1.cabbage 1 large onion 1 can of cornbeef.Take old leaves off wash cabbage,cut into 4's twice.Add just enough water to cover cabbage,add butter salt%26amp; onion,let boil until tender about 45 min.add cornbeef cut up and let cook for about 20 more min. and there you have it all you need now is cracklin corn bread,,YUMMY!!!
