Middle Eastern Cabbage Recipes?

There is a side dish made from cabbage that I have usually had with Middle Eastern food and at kosher restaurants. It doesn't appear to be cooked and seems to have been marinated in something. Can anyone help me out?

Shredded Green Cabbage Salad with Lemon and Garlic

This light, tangy salad could not be simpler: shredded green cabbage tossed with lemon, garlic, olive oil and salt. Wonderful with fish, the salad is also a popular accompaniment to kaftah, or Middle Eastern braised ground beef.

ingredients

1 garlic clove

2 tablespoons freshly squeezed lemon juice

2 tablespoons extra-virgin olive oil

2 pounds green cabbage, cored and finely shredded

Kosher salt



directions

In a mortar, pound the garlic to a puree. Stir in the lemon juice and olive oil.

In a large bowl, toss the cabbage with the dressing. Season with salt and toss again. Serve right away or let the salad rest in the dressing for the flavor to penetrate deeper.





Red Cabbage Salad

1 onion, finely chopped

14 ounces red cabbage, finely sliced

5 tablespoons sunflower oil

2 tablespoons lemon juice

2 tablespoons mayonnaise

1 teaspoon mustard

1 1/2 teaspoons cumin



Combine cabbage and onion in a large bowl.

In another bowl whisk together oil, lemon juice, mayonnaise, mustard and cumin.

Pour over cabbage mixture.

For best flavour allow to marinate a minimum of 2 hours before serving.
