I'm making cornede beef and cabbage tonight and I found a really good recipe for it...?

My question is- when I simmer it, do I cover the pot, or leave it uncovered....?

it helps keep juices in the pot and keeps meat moist
Reply:Put the lid on in such away that will allow a little of the steam to escape.
Reply:Cover for a while,then if you want some of the liquid out,turn up flame and fry a while.Really good that way...
Reply:Cover it or the corned beef will dry out.
