If brussel sprout plant doesn't produce sprouts can one consume the plants' leaves as one does cabbage?

Rabbits ate the top of the plant in the sring and now the plant if not forming a stem. The leaves are opening similar to cabbage. Chuck it or use them?

the brussel sprouts grow on the stem ....the taller it gets the more you have......they can get 3 to 4 foot tall and full of sprouts........
