How can I cook red cabbage without losing most of the colour?

I usually just boil it or steam it
How can I cook red cabbage without losing most of the colour?
You can braise it in the oven. Shred or chop the cabbage and put in a roasting pan with whatever liquid you want...apple cider vinegar, chicken stock, red wine. Just barely cover the cabbage with the liquid and braise in the oven until tender. I also like to add a little onion and garlic to the pan.
Reply:Oh my God! Boiled cabbage - I can smell it now. Cut out the thick stems and shred the cabbage. Wash it and put it in a pan in which you have already sweated off some diced onion, garlic with cummin seeds (caraway) and maybe a few frozen chestnuts. If you keep shaking the pan cooking time should be about 10 minutes max. If you must add vinegar, then just a splash of Balsamic. (I know it's no longer in fashion, but try it anyway).
Reply:IF IT IS fresh then you put it in boiling water and add a teaspoon of bicarbonate of soda. helps keep the colour.
Reply:Boil it but add a little lemon juice to the water. That stops the colour running. Then, for a really nice twist add some caraway seeds. Do not add the salt until the end.

Reply:add a tbsp vinegar to water when you boil it.
Reply:I chop up cabbage in 2 inch strips, add chopped onion, peppers and sometimes diced tomatoes. Saute them in small amount of olive oil. Cook on medium to start then turn down to low and cover. Serve when crispy tender. Add bacon if you like.
Reply:try braising it in the oven in a little white or red wine whichever you prefer add a little butter really yummy it goes well with most things

Reply:Don't cover the cabbage with water when you boil it (make sure the water is boiling first before adding cabbage) and add a dash of vinegar (not too much)

Other than that is to stir fry it!!
Reply:Cut a whole cabbage (red or green) into quarters, then slice off the core in the middle. Chop or shred as needed for your recipe, then rinse in a colander.

Steam green or Asian napa cabbage wedges for 6 to 8 minutes and serve them with Asian peanut sauce. (For a simple version, whisk 1/4 c. smooth peanut butter, preferably unsweetened, with 2 tbsp. hot water, 2 tbsp. soy sauce, 1 1/2 tbsp. vinegar and 1 to 2 tsp. Asian chile garlic sauce.) Garnish with chopped cilantro.

Boil cabbage wedges for 8 to 10 minutes.

Sauté chopped or shredded cabbage for 6 to 8 minutes over medium heat, or until tender but still crisp.

Match cabbage with mustard - mustard butter, mustard sauce or honey-mustard dressing.

Give cabbage, red or green, the sweet-and-sour treatment. Stew it with onion, chopped apple, water, a mild vinegar such as cider vinegar and sugar (four parts water, two parts vinegar, one part sugar).

Toss cooked cabbage with brown butter and caraway seeds.
Reply:in orange juice and brown sugar it will lose its colour during cooking but when the liquid reduces the colour to the cabbage will come back
