Can I use a canning pot to cook corned beef and cabbage?

I have a 21 quart Granite Ware canning pot with rack. Would the surface be safe for the food for this type of cooking (several hours of simmering)?

yes you can
Reply:I would say no. Although the name sounds "tough" (Granite Ware) it was manufactured for a specific purpose. If you need to use it because of the size dueto the size of the brisket just cut the brisket into more managable pieces and proceed as you would to finish the meal.
Reply:I just cooked corned beef for 150 for a find raiser. You should braise the corned beef (brown it). Add your liquids, I used beer and water with your spice packet. Cook for two hours minimum ( I let mine go over night on a very low oven but I had 75 pounds of corned beef) the round is fatter than the brisket which is the long thinner cut. Throw some potatoes in that you'll throw away to reduce the salty taste. Cook your potatoes, cabbage and carrots on the side . I added mac %26amp; cheese and soda bread.
Reply:Yes, I would think so. But do us all a favor, dont' asdd the cabbage until the last 20 minuts of cooking! :-)

Reply:It probably would be safe, as canning takes a long time, so a piece of corned beef and cabbage wouldn't take as long, 60-90 minutes, depending on the size of the meat.
