Any good cabbage recipes?

I bought a small head of green cabbage by mistake the other day and I figure I'll make it for my family for easter. The only cabbage recipe I've heard of was boiled cabbage and I'd rather have something that's relatively less soggy. So any suggestions?

FRIED CABBAGE AND NOODLES



1 head of cabbage

1 box of elbow noodles

butter



Cut up head of cabbage and saute in butter in skillet. Reduce heat and continue to cook slowly. Meanwhile, in a large pot of salted boiling water, prepare 1 box of elbow macaroni according to package directions.

Once noodles are done and the cabbage is soft, drain the noodles and mix with the buttered cabbage.



Cover and let simmer on low for about 15 minutes.



This is a very old recipe that tastes fantastic. You can almost eat the whole thing yourself. Enjoy!!!

1 tbsp. olive oil

1 1/2 tsp. curry powder

1 med. onion, thinly sliced

4 cups shredded green cabbage

1 1/2 tsp. fresh lemon juice

2 tbsp. plain yogurt



Heat oil in a skillet, over medium heat. Add curry powder. Cook 30 seconds.

Add onion and cook until translucent. Add cabbage and cook, stirring occasionally

until wilted and soft. Remove from heat. Stir in lemon juice and yogurt until

1 1/2 lbs ground pork or beef

1 medium onion, chopped

1 dash garlic powder

1 dash oregano

32 ounces spaghetti sauce

1/4 cup rice

1 dash basil

1 head cabbage

1 lb mozzarella cheese, shredded



1. Shred, boil 3 minutes and drain cabbage.

2. Brown onion and meat and Drain.

3. Place cabbage in casserole dish.

4. Place meat mixture on cabbage.

5. Add garlic powder, oregano and basil on meat.

6. Add spag.sauce and rice.

7. Layer like you do lasagne.

8. Top with cheese.

9. Cover and bake 1 hour at 350F degrees

ingredients

1 2 1/2-pound cabbage, quartered, cored, very thinly sliced (about 18 cups)

2 fresh fennel bulbs, trimmed, halved, very thinly sliced (about 3 cups)

1 small onion, thinly sliced

1 very large carrot, peeled, coarsely shredded

3/4 cup mayonnaise

1/2 cup sour cream

2 tablespoons fresh lemon juice

1/2 teaspoon sugar

1/2 teaspoon hot pepper sauce

preparation

Combine cabbage, fennel, onion, and carrot in large bowl. Whisk mayonnaise, sour cream, lemon juice, sugar, and hot sauce in medium bowl to blend. Season dressing to taste with salt and pepper. Add dressing to cabbage mixture; toss to coat. Season slaw to taste with salt and pepper. Refrigerate at least 1 hour and up to 2 hours, tossing occasionally. Transfer to serving bowl.









CABBAGE SOUP WITH APPLES AND THYME



ingredients

3 tablespoons butter

1 tablespoon olive oil

8 cups thinly sliced cored green cabbage (about 1/2 large head)

1 large onion, chopped

8 large fresh thyme sprigs

6 cups low-salt chicken broth



1 1/4 pounds Golden Delicious apples, peeled, cored, cut into 1/2-inch cubes



Chopped fresh thyme

Melt 1 tablespoon butter with oil in heavy large pot over medium-high heat. Add cabbage and onion; sauté until vegetables wilt and brown, stirring occasionally, about 15 minutes. Add 8 thyme sprigs and sauté 1 minute longer. Add broth and bring to boil. Reduce heat to medium and simmer 5 minutes. Season to taste with salt and pepper. (Soup can be made 1 day ahead. Cover and refrigerate. Rewarm before serving.)



Melt remaining 2 tablespoons butter in heavy large skillet over medium-high heat. Add apples and sauté until brown and tender, stirring occasionally, about 12 minutes. Season with salt and pepper.



Remove thyme sprigs from soup. Ladle soup into bowls; garnish with apples and chopped fresh thyme and serve.











CABBAGE STUFFED WITH BEEF, ZUCCHINI, AND HERBS



ingredients

2 cabbages or Napa cabbages (1 1/2 lb each)

1/4 cup fat-free chicken broth

3 tbsp olive oil

2 small zucchini, finely diced

1 large tomato, finely diced

1 sweet onion, finely chopped

1 small eggplant, finely diced

1 tbsp chopped garlic

6 oz lean ground beef

1 tbsp each chopped fresh basil, parsley and thyme

1/4 cup whole-grain breadcrumbs

2 tbsp melted unsalted butter

preparation

Heat oven to 350°F. Cut cabbages in half from top to base. Cut out core; discard. Pull out inner leaves of each half, leaving 3 outer layers (reserve). Finely slice inner leaves. Heat broth and 2 tbsp oil in a medium sauté pan on medium. Add vegetables (plus sliced cabbage), garlic, and beef. Cook until vegetables are tender and meat is browned; add herbs; place in cabbage halves. Mix butter with breadcrumbs; place on top of cabbage; drizzle remaining 1 tbsp oil on top. Bake until tender, about 35 minutes. Season with salt and pepper. Serve hot.

1 pound of ground chuck

1 cup of rice

Salt, pepper to taste

1 Cabbage, cored

1 can of diluted Campbell's tomato soup

1 can of Hunts tomato sauce



Put cabbage in hot water and boil for a few minutes, then separate your leaves and make your rolls with meat and rice mixture inside cabbage. Fasten with toothpick. Mix the soup and sauce and pour over cabbage in a 4 quart pan, covered, medium heat for 1 to 2 hours.



Stuffed Cabbage Rolls 2



1 pound of hamburger

1 pound of pork sausage

1/3 cup of uncooked instant rice

1 medium onion, chopped

Salt %26amp; pepper to taste

1/8 teaspoon of garlic salt

1 can of tomato sauce (15 oz.)

1 teaspoon of sugar

1/2 teaspoon of lemon juice

1 tablespoon of cornstarch

1 tablespoon of water

12 cabbage leaves



Cover cabbage rolls with boiling water. Cover and let stand until leaves are limp, about 10 minutes. Remove leaves; drain. Mix hamburger, pork sausage, rice, onion, salt, pepper, garlic salt and 1/2 of tomato sauce. Place hamburger mixture in each cabbage leaf, roll up, tucking all sides under. Place cabbage rolls seam side down in ungreased baking dish. Mix remaining tomato sauce, sugar and lemon juice. Pour over cabbage rolls. Cover and bake at 350oF. for 45 minutes. Mix cornstarch and 1 tablespoon water in saucepan. Stir in liquid from cabbage rolls. Heat to boiling, boil 1 minute. Serve sauce over cabbage rolls.
