What can I make for St. Patrick's Day dinner to go along with stuffed cabbage?

I'd make some mashed potatos with chopped green onion, butter, and cream cheese. Also, steamed, crisp-tender carrots with brown sugar and butter would also be nice. You didn't mention whether or not your stuffed cabbage has meat in it, but I'm assuming that it does, so no further meat dishes are necessary!

An overcooked brisket (salt and pepper and brown in a pan. Cover with sliced onions - a ton - carrots, celery, parsnips and a guinness beer. Braise in the mixture in the oven for 2+ hours - depends on how big - slice and serve with guinness gravy.) is always nice.
