Corned Beef and Cabbage?
Corned Beef and Cabbage

6 servings

Prep: 15 minutes

Cook: Low 10 to 12 hours, High 5 to 6 hours

Ingredients

1 3- to 4-pound corned beef brisket with spice packet

1/2 small head cabbage, cut into 3 wedges

4 medium carrots, peeled, and cut into 2-inch pieces

1 medium onion, quartered

2 medium yellow potatoes, cut into 2-inch pieces

1/2 cup water

Directions

1. Trim fat from meat. If necessary, cut brisket to fit into a 5- to 6-quart slow cooker. Sprinkle spices from packet evenly over meat; rub in with your fingers. Place cabbage, carrots, onion, and potatoes in the slow cooker. Pour water over vegetables. Top with brisket.

2. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours. Transfer meat to a cutting board. Thinly slice against the grain. Serve vegetables with a slotted spoon. Makes 6 servings.
Reply:Just boil and then simmer it one hour to one pound. Add the cabbage in at the last 45 mins. Some people like to use beer instead of water.

The Irish don't really eat corned beef and cabbage, but sweeping generalizations are hard to erase. Enjoy anyway. Serves four.

Serve with boiled or steamed potatoes and mustard.

The "corned" in corned beef means that it's been cured with salt. You buy it already "corned."

on 11/22/2005 It's easier to use the fresh baby carrots found in the produce section of your grocery store. I use them when carrots are required for stews, soups and boiled dinners.

on 11/22/2005 INSTEAD OF USING WHOLE CARROTS, YOU MAY USE BABY CARROTS, THESE CAN BE FOUND IN THE FREEZER SECTION OF MOST FOOD STORES.
Reply:I assume you've purchased a pre-packaged corn beef brisket with a packet of seasoning.

I do it this way.

Put the corn beef in the crock with seasoning packet and water to cover. Throw in a couple of large carrots. Cook on high until the meat is fork tender.

As soon as the meat is done slice your cabbage in half. Then cut your halves into three or four wedges. Put these in a large pot. Pour juices from the crock pot over the cabbage and simmer it until it reaches desired tenderness. (10 - 20 minutes depending on the size of your cabbage.)

I don't do the cabbage in the crockpot because I think it over cooks and looses flavor.

I usually dice three or four potatoes and cook them with the cabbage. But, you don't have to. Both the carrots and potatoes are optional. We just like them.
