OLD STYLE CABBAGE ROLLS



1 head of cabbage

1/2 cup butter

3 cups rice

2 onions

1/2 tsp. garlic

2 cans tomato juice

salt and pepper



Boil cabbage leaves in pot until tender, do not overcook. Boil rice until it's soft. In pan, melt butter, add diced onion and garlic. Cook onion on medium heat until golden brown.

When cabbage is ready, mix rice, butter and onions together in a big pot.



Lay the leaves of cabbage one leaf at a time across your hand, then spoon rice mixture onto one end of the leaf. Roll the cabbage and push in rice from the open ends. Put them in a crock pot with a sheet of wax paper between the layers.



Pour one can of tomato juice on them and let cook for 1 hour, then add another can and let cook for another 45 minutes. Add salt and pepper to taste.

Old Fashioned Cabbage rolls

You can prepare these up to baking the day before



Ingredients

1 Medium head of cabbage

1 pound Ground turkey

1 can (15 ounces tomato sauce divided

1 Small onion, chopped

1/2 cup Uncooked long grain rice

11 tablespoon Parsley flakes

1/2 teaspoon Dill weed

1/8 teaspoon Red pepper

1 can ( 14 ounce) diced tomatoes undrained

1/2 teaspoon Sugar



Preparation

Remove core from cabbage. In a large kettle cook cabbage in boiling water for 2-3 minutes. Remove outer leaves when softened; return to boiling water as necessary to obtain 12 leaves. Drain; remove thick centre vein from leaves. In a bowl combine turkey, 1/2 cup tomato sauce, onion, rice parsley, dill and red pepper; mix well. Place about 1/4 cup meat mixture on each cabbage leaf. Fold in sides; starting at unfolded end roll up to completely enclose filling. Slice the remaining cabbage; placing in baking dish. Arrange cabbage rolls seam side down, over cabbage. Combine tomatoes, sugar and remaining tomato sauce; pour over cabbage rolls. Cover and bake at 350 for 1 1/2 hours.

Reply:I use pasta sauce when I make them. 1 jar (large) of your favorite pasta sauce (marinara or meat) about 1 1/2 lbs of ground beef, about 1 1/2 cups of rice. You will also need minced onions, garlic, red pepper, salt, pepper and red pepper flakes. Of course a cabbage. Wilt cabbage leaves in hot water until they are pliable but not cooked all the way, set them aside to cool. You can do this one of two ways, you can cook the beef and drain (which I do because of the oil) or you can do it raw. In a bowl, add ground beef, rice, salt, pepper, red pepper flakes onion and garlic (you can add a teaspoon of sugar if you like), some of the pasta sauce and 1 egg and the cooled rice and mix well, with your hands is best so you can throughly mix it, but however you wish, you may need 2 baking dishes as this mix can make a whole lot of rolls, place mixture close to one edge of leaf roll and place seam side down in baking dish, continue until you have a many as you need, cover with pasta sauce. Then place in a 350 degree oven , covered with foil, for about 45 mins or until done. I also put potatoes in the backing dish, they absorb some flavor and always come out like orange from the oil. Use a cookie sheet under the baking dish because somehow it makes a lot of liquid. You can use hot itialian sausage in the mix too, it's up to you.....you might want to put some oregano also. Good Luck....I serve it with the potatoes and maybe some corn....it's nearly a meal in itself.

I am from Romania. I saw your question and I think I have a good recipe of cabbage rolls from my grandmother. Enjoy.

Cabbage rolls

1 1/2 kg cabbage; 1/2 kg grounded pork meat; 100 gr rice; 100-150 ml oil; 100 gr onion; 100-150 ml tomatoes juice; peeper, salt; dill, savory(bean tressel).

Cut the onion in very small pieces and put it in hot oil. Roast it 2-3 minutes. Add the rice and mix it well. Put the peeper, salt, dill and savory and mix. Let the mixture chill and then add the grounded meat.

Put water and salt in a big pot. When the water boils put in the leafs of cabbage for 30 sec. Let them chill in another pot. Cut the rib and then cut the leaf in two equal parts. You will do the same with all leafs.

With a spoon take a small quantity of mixture and put it on a leaf. Roll the leaf and at the end of every roll you`ll put the remain of the leaf inside the roll. When you finish the meat mixture, you`ll cut the rest of the cabbage in narrow strips. Put half of them on the bottom of a pot then put the cabbage rolls and at the end put the other half of cabbage strips. Put the tomatoes juice and water in the pot. They need to boil for about... 1 1/2 - 2 hours at small fire.
