I would like to make some cabbage soup. What's your best recipe?

CABBABE SOUP WITH A KICK

1 large head of cabbage

2 quarts beef stock

2 tablespoons butter

1 1/2 cups onions, chopped

1 cup carrots, chopped

2 cups celery, chopped

1 teaspoon salt

1 bay leaf

1 teaspoon dill weed

1 lb sausage or kielbasa (I prefer Kielbasa)

2 tablespoons parsley

1 (10 ounce) can diced tomatoes (To kick it up use Rotel or tomatoes with green chiles)

2 cups potatoes, diced (I used canned)

fresh ground pepper

sour cream (to garnish)

Slice cabbage into quarters then chop removing the hard center.

Bring beef stock to a simmer while preparing the vegetables.

In a large skillet melt the butter, add onions, carrots and celery. Cover and cook for about 10 minutes until the veggies are about tender.

Turn the veggies into the stock pot and add salt, bay leaf and dill weed. Bring to a simmer for about 20 minutes.

In the same skillet used for veggies, brown the kielbasa or sausage.

Add the kielbasa, parsley, diced tomatoes and potatoes and continue to simmer an additional 20 minutes.

Add the cabbage, bring to a boil and then simmer another 4-5 minutes.

Serve hot with fresh ground pepper and a dallop of sour cream (YUM!)Keep warm in crock pot.

3 tbsp. tomato paste

2 tbsp. olive oil

4 c. water

2 tbsp. instant beef bouillon

1 pkgs. Lipton onion soup mix

1/2 c. chopped carrots

1/2 c. chopped celery

1 tsp. chopped parsley

1/2 tsp. Italian Seasoning

1/2 to 1 c. chopped cabbage

1/4 tsp. garlic powder



Combine tomato paste, olive oil, water, beef bouillon, onion soup mix, garlic powder in stockpot. Bring to a boil. Simmer for 10 to 15 minutes. Add carrots, celery, parsley and Italian seasoning. Simmer for 20 minutes. Add cabbage, simmer until tender. Ladle into soup bowls.
Reply:I make most of my soups in the crockpot. The flavors seem to blend better to me with low fat ingredients being used.



I make a chunky cabbage soup.



1 medium head green cabbage

2 medium carrots, thinly sliced

1 large sweet onion

4 ribs celery sliced on the bias

1 envelope onion soup mix

1 pound lean ground beef, cooked and drained

1 large green bell pepper

4 fresh tomatoes or 1 large can tomatoes, juice included

Water

Small diced potatoes.



Coarsely chop cabbage, onions and tomatoes. Place first 6 ingredients in crockpot with enough water and/or tomato juice to just see through veggies.



Sprinkle with onion soup mix and stir in.



Add cooked ground beef.



Small dice potatoes may be added with meat if desired.



Cook for 6 to 8 hours on low in a 5 quart crockpot.

6 ounces extra lean ground beef

1 clove garlic, minced

1 cup chopped onions

4 cups chopped cabbage

2 (14 1/2 ounce) cans reduced-sodium stewed tomatoes

1 3/4 cups water

3 cups shredded raw beets

1 tablespoon lemon juice

2 tablespoons brown sugar (packed)





1. Coat a large pot with nonstick spray.

2. Crumble the beef into the pot.

3. Cook over medium-high heat, breaking up the meat with a wooden spoon, for 4 to 5 minutes, or until lightly browned.

4. Line a platter with several thicknesses of paper towels.

5. Transfer the beef to the plate and drain well.

6. Wipe out the pot with a paper towel.

7. Add the garlic, onions and cabbage.

8. Saute over medium heat for 15 minutes, or until the cabbage is softened; if needed, add a few tablespoons water to the pot to prevent sticking.

9. Add the beef, tomatoes, water, beets, lemon juice and brown sugar.

10. Bring to a boil over high heat.

11. Cover, reduce the heat to medium and cook for 10 minutes, or until the beets are tender.

Cabbage and Pasta Soup



1 head cabbage, cut into hunks

1 tablespoon olive oil

5 ounces pasta shells (any type small pasta)

3 cups chicken stock



Heat oil in big stock pot.

Add cabbage and cook for 2 minutes.

Add chicken stock.

Simmer for 30 min.

With the lid on.

Add pasta,continue cooking for 15 minutes until pasta is done.
