LUMPIA (EGG ROLLS)

1 chicken breast cooked

8 oz. cooked pork

1 cup finely diced celery

8 oz. cooked shrimp

1/2 cup chopped green onions

4 oz. fresh bean sprouts

2 tsp. salt

8 oz. cabbage

1/2 tsp. ground black pepper

4 oz. green beans

2 tbsp. light soy sauce

2 tbsp. peanut oil

1 packet egg roll wrappers

4 cloves garlic, finely chopped

Bone skin and dice chicken breast. Dice pork finely. Roughly chop shrimp.

Wash bean sprouts and drain. Pinch off straggly brown tails and chop roughly.

Shred cabbage finely, string beans and cut into very thin diagonal slices.

Heat oil and fry garlic over low heat for one minute, then add chicken, pork, and shrimp and stir fry one minute before adding beans. Stir fry for two minutes, then add sprouts, cabbage, celery, and onions. Toss and cook until tender but still crunchy.

Add seasoning, mix well, then drain away excess moisture.

For fried Lumpia, put filling on egg roll wrapper and roll up, moistening tip to seal. Fry in deep oil heated to 375 for two minutes or until golden brown and crisp. Drain on absorbent paper and serve with favorite sauce. Enjoy!

Mock Bok Choy Cabbage Salad

3 oz ramen noodle soup mix - Oriental flavor

2 tbsp. sunflower seeds

1/4 cup cider vinegar

1/3 cup vegetable or canola oil

2 1/2 tbsp. sugar (splenda is ok)

1 bag coleslaw mix (or half a head of finely shredded cabbage)

1/4 cup sliced almonds

5-6 green onions, sliced (green and white separated)

Remove flavor pack from soup, set aside. Break ramen noodles into pieces and place on lightly greased baking pan. Add sunflower seeds, bake at 350oF for 5-8 min or until toasted, stirring occasionally.

Whisk flavor pack, oil, vinegar and sugar in a jar until blended. Chill at least one hour.

Place coleslaw mix in a large bowl, add sliced onion bulbs (white part).

About 1 hour before serving, mix dressing into coleslaw mix. Place noodles around the outside edge of cabbage, top center with almonds and onion greens. (Makes a nice presentation, but for our family I just sprinkle all of the above on top).

(If you need a large quantity, use the big bag of coleslaw mix from Sams and doubled the other ingredients .)

This is an alternate dressing not using the flavor pack:

3/4 cup oil

3/4 cup sugar

1/2 cup cider vinegar

2 tsp. soy sauce

pepper to taste

Combine and chill before serving.
Reply:cut it up boil it with salt , pepper and some butter.
Reply:I learned this from my husband during our Honeymoon! It's actually pretty delicious: Shred the cabbage as you would for coleslaw; emmerse it in heavily salted ice water. Let stand for about an hour. Meanwhile, boil up some extra-wide egg noodles, rinse and drain. Set aside. After an hour (or more) drain the cabbage and squeeze as much moisture as you possible can from the cabbage. Keep squeezing. When you think you've got all the moisture out, Squeeze some more! When it's as dry as it's gonna get, turn it into a hot frying pan with LOTS of melted butter. Continue to stir around, coating with the butter and until it's very hot. Add buttered noodles, toss gently. Serve alone or as a side! It's truly tasty. Please let me know what you think!
Reply:In a sauce pan melt 1/4 cup butter or oleo. Add chopped cabbage and cover. Let steam till cabbage is partially done. Meanwhile cook 6 or 8 ounces of noodles. Drain and add to cabbage. Simmer till cabbage is done. Add salt and pepper. Cooked carrots maybe added.
Reply:steam it in a saucepan with a tiny bit of oil and some water, salt %26amp; pepper on high heat covered.
