Reply:I'm not sure what this dish is called,I don't think it has a name due to the fact myself and my brother cooked it once(aged about 15) with store cupboard ingredients but it sure was delish!

We layered white cabbage(sauteed)with onion sauce in a casserole dish.

We then layered Irish sausages in between the cabbage and onion sauce.

Next we added parsnips, carrots, swede and potatoes(mashed together)with pepper and a touch of butter.spread on the top.

Lastly we added grated mexicana cheese.

Popped it in the oven and hey presto a yummy inexpensive meal.

Reply:The name escapes me but it is Korean version of saurkraut. Kim chee?

I have a friend who is first generation Korean American. She always talked about how nasty it was but how much she loves it. She let me try some, I thought I would hate it but it really wasn't all that bad.

Now, saurkraut, as in reubens and bratwurst, is gross in my opinion. They served it in elementary school and to get seconds of anything else, we had to take a bite of everything on our tray first. God, I hated that stuff.

Flaming Orange Habanero Kimchee

1 Large Head Napa Cabbage

Salt

Water

5 Habanero Peppers (stems removed)

4 Garlic Cloves

4 Green Onions

1 Slice Fresh Ginger (1/2" thick)

1/4 Teaspoon Cayenne Pepper (or to taste)

Cut cabbage into 1-inch slices. Dissolve about 1-2 tablespoons salt in enough water to cover cabbage slices in a non-reactive container. Leave cabbage to soak in salted water for 12 to 24 hours at room temperature.

Rinse cabbage well, drain, and set aside.

Chop peppers (with seeds), green onions, garlic, ginger and ginger, and mix with 1 tablespoon salt and cayenne pepper. Pack cabbage in a non-reactive container, cover with water and gently stir in chopped pepper mixture. Refrigerate for several days before serving. Keeps quite a while if stored in refrigerator. Remove kimchee from liquid before serving.
