What's a good marinade for corned beef for corned beef and cabbage?

If you've purchased a "corned" beef brisket then it's already been brined. So, if you bought it in a plastic bag with a seasoning packet, you are all ready to go. Don't add a thing. Follow package directions.



However, if you've purchased a piece of beef brisket, plain with no seasoning then you'll want to brine your meat. This kind of brisket won't have the red color of the packaged one.



For 4 1/2 pounds of beef brisket you'll need:



3 quarts of water

2 cups salt

1/2 cup of sugar

4 bay leaves

16 peppercorns

4 teaspoons pickling spices

4 cloves garlic.



1. Trim excess fat from the meat

2. Boil about 3 cups of the water in a saucepan and add the sugar and salt to dissolve.

3. Put the meat in a large container. Add the salt and sugar water, 1/2 the spices and garlic, and the rest of the water. Use a heavy bowl or plate to keep the meat completely covered with water.

4 Refrigerate this for 48 to 60 hours.

5. Remove meat and rinse thoroughly. Throw away the brine.

6. Put meatin a large pot and cover it with boiling water.

7. Add the remaining spices and garlic.

8. Simmer it about 4 hours or until the meat is tender.



*Note: You can substitute beer for at least half of the water in the BRINE. Last year I brined two pieces of brisket. I forgot to pick up the beer and didn't want to drive back to town for it. So, I brined the second piece of beef without beer. We all preferred the brisket without beer.



I usually drop in a few potatoes during the last 20 minutes or so of cooking time. I make my cabbage in a separate pot using some of the cooking water to flavor it.

good one from sew what, follow that, but if you also want to kick it up , like they do at Obriens pub in newport, ri, the irish home away from home, put about qtr cup prepared mustard in the water and boil or simmer away
Reply:its in a brine already... You dont want to marinate on top of that. It would be tough.
Reply:You don't need to marinade corned beef as it is a brine ready and pre-packaged item with the pickling spice packet included for you to just boil up.....

Reply:Those Knorr dry marinades that you add different liquids to are good!
Reply:I normally add some malt vinegar, black peppercorns, and golden syrup to the water I simmer it in.
