Quick and easy corned beef and cabbage dinner?
CORN BEEF %26amp; CABBAGE



2 to 3 lbs. corn beef, seasoned

2 med. onions

5 carrots

6 potatoes

1 lg. head cabbage



Put corn beef in large pot. Bring to boil with onions for hours. Add carrots and bring to boil again. Simmer. Add potatoes, bring to boil, simmer. Last add cabbage, cook until tender, about 15 minutes. A "Brisket Beef" may be used instead of corn beef or ham. Season to taste if needed.



CORNED BEEF %26amp; CABBAGE



2 lb. well trimmed corned beef boneless brisket or round

1 sm. onion, cut into fourths

1 clove garlic, crushed

1 sm. head green cabbage, cut into 6 wedges

5 carrots

6 potatoes



Pour enough cold water on corned beef in 5 quart Dutch oven just to cover. Add onion and garlic and vegetables. Heat to boiling; reduce heat. Cover and simmer until beef is tender, about 2 hours.

Remove beef to warm platter; keep warm. Skim fat from broth. Add cabbage. Heat to boiling; reduce heat. Simmer uncovered 15 minutes.

Spice packet pre-packed with corned beef

1 T minced garlic

2 bay leaves

1 T whole peppercorns

1 small onion, cleaned and quartered

water

Optional: new potatoes, baby carrots, green cabbage wedges



Preparation:



Open corned beef package and drain. Place meat in a heavy dutch oven.



Open spice packet that comes with the meat and pour over the top.



Add enough water to come up 3/4 of the height of the meat.



Add the garlic, bay leaves, peppercorns and onion.



Cover pot and bring mixture to a boil.



Reduce heat and simmer basting occasionally for about 3 hours or until meat if fork tender.



If you are adding vegetables, place in the pot the last hour of cooking. Less for the cabbage. When done, remove meat from the broth and allow to sit covered for about 5 minutes.



Slice meat thin or cut into chunks, whichever you prefer.



Plate sliced meat with veggies on the side.



Strain the broth and serve as gravy.
Reply:Place corned beef in pot with 6-8 cloves, an onion, 2 tbl brown sugar %26amp; 1/2 cup brown vinegar. Bring to boil and simmer for 2-3 hrs. In a saucepan melt some butter and stir cabbage in with salt/pepper (only 10min). Optional - get another saucepan %26amp; melt 25g butter and then stir in heaped tbl plain flour until lumps dissolve. Add milk/cream until thickens (stirring regularly to reduce lumps). Then add the onion from the corned beef into sauce). Sounds complicated but actually not. Fav family here!
Reply:get the smallest corned beef you can find at the grocery, and the smallest cabbage. Cover the corned beef with water, with the seasoning packet in there, and simmer for about 45 min-1 hr. Then add some cut-up or little potatoes and cook another hour. About 15 min. before serving, put cabbage wedges in the water. Slice and eat ...... salt %26amp; pepper to taste, when done - we like it with spicy mustard and horseradish...... Only 2 of us too. Leftovers make good sandwiches or hash (for breakfast); although I never have any leftovers, because my husband eats it all!
Reply:I do mine in the crock pot so that its done when I get home.

Cut a small cabbage up into pieces, chop a onion, Cut up a few carrots. I put a few potatoes in to absorb some of the salt.

Put the corned beef on top. I smear the top of my corned beef with spicy mustard first, then add the spice pack.

Add about 1/2 cup of water to the crock.

Cook on low until you get home from work. about 5-6 hrs.

Do not add salt to this. The corned beef is salty and will flavor everything in the pot.
