Need help rounding out a cabbage roll dinner menu?

Okay, I need a couple of side dishes to go with cabbage rolls. The tricky part is that my guest is allergic to all wheat, oat, and rye products. Everything else is a go. Help!!!! I'm most likely going to be offering fruit skewers with fruit dip for dessert.

I am allergic to those things to, so I hope I can help. I am assuming that you are using rice in the rolls, so that precludes a rice side dish. How about steamed new potatoes in parsley butter sauce. A shredded zuchini salad (I make a homemade green onion dressing with some olive oil, vinigar, green onions, salt and pepper and a wee drizzle of honey-cant give you the measurements cause I just chuck it all in the blender. Steamed beets would also be a colorful addition to your plate. For dessert your fruit skewers sound yummy. I make a dip with yogurt, honey and apricot jam. You could maybe serve a nice cheese with it? Or perhaps pears poached in red wine or fruit juice or a baked apple. It is VERY kind of you to do this for your friend and I salute you! My friends dropped me like a hot potato when I became allergic, because I could no longer eat out with them. I have yet, in 4 years, had anyone offer to cook for me! Can I come to your gathering? hahaha Good luck, hope this helped For future ref, or to pass on to your friend, there is a delicious rice pasta available from Tinkyada brand, comes in many shapes including lasagna and jumbo shell. It is a staple in my house! I used to get it at the health food store, but was able to get my local grocery to start stocking it. It is really good Oh, and just a heads up for you, make sure that none of your seasoning ingredients or sauces have her allergens in them, like in soy sauce, worstershire, etc. check the labels!
Reply:My grandma is hungarian, and she fixes cabbage rolls as a special meal for me when I come stay with her. She usually fixes Hungarian noodles with them, and broccoli with cheese, and homemade bread. but you could do red potatoes with ranch dressing mixed in (its really good!). okra is a really good vegetable, you can bread it and fry it in a skillet. maybe some deviled eggs and a veggie tray too.

Reply:You don't need much with GOLABKI (gaw-WUMP-kee) since you already have vegetable, rice and meat. I personally like to top my golabki with strips of bacon while cooking, gives them an added rich flavor. Try this nice salad, it's easy and complements the flavors well.



EASY TOMATO/CUCUMBER SALAD



1 tomato

1/2 cucumber, peeled

1 cup mayonnaise

1/4 cup sour cream

dill to taste



Dice tomato and cucumber into small cubes of desired size.

Combine all ingredients in a salad bowl.



Refrigerate for at least 45 minutes, then serve.



Of course kielbasa always goes well as an addition to any Polish meal.

Reply:Round it out with roasted Kielbasa and pirogis made with eggs, potatoes cheese and shredded cabbage (occasionally sauerkraut) and bowl of polish cabbage soup called kapushta (I am not sure about how to spell these).

Broccoli Slaw Recipe



1 bag broccoli slaw salad (you will find this with the pre-packaged salad mixes at the grocery)

2 pkg. oriental ramen noodles dry

1 cup sunflower seeds (salted, no shells)

1 cup slivered almonds

1/4 cup butter

3-4 chopped green onions



Saute in butter the broken noodles, sunflower seeds and almonds until light brown

Let it cool completely.

Mix with slaw in bowl.



Dressing

Seasoning packets from the noodles

1/3 cup Hot Chili Sesame Oil (this is the biggest challenge to find, the brand I like the best is House of Tsang, my mom buys it in Oklahoma of all places and brings me a supply when she visits! Sometimes Whole Foods carries the hot chili sesame oil in another brand and it tastes fine, just do not try buying plain sesame oil and hot chili sauce and mixing, it does not work).

1/2 cup vegtable oil (Crisco)

1/2 cup sugar

1/3 cup white wine vinegar



Put on slaw before serving and mix well. I actually think that it sometimes tastes better the second day.
